Coffee beans from Aceh Province in northern Sumatra, Indonesia. Its name comes from the Gayo ethnic group that inhabits this part of the island. The raw grain has a dark green color, thanks to semi-washed processing. The taste is noticeable cedar wood and forest fruits immersed in milk chocolate.

    Cultivation coffee in Indonesia, has over 300 years of history related to Dutch colonization. After Indonesia gained independence, most plantations went bankrupt or were taken over by the state.

    HISTORY

    Gayo ethnic group

    The name of the coffee comes from the ethnic group Gay, which lives mainly the northern part of the island of Sumatra. The plantations are located in the Aceh province, where they come from our coffee beans.
    The Gayo language consists of four dialects: Lut, Serbejadi-Lukup, Lut and Luwes. They do not have a writing system, and traditions, legends and stories are passed down orally from generation to generation.

    Processing of coffee beans

    Coffee beans have unique dark green color, which they owe to special processing. Immediately after harvest, farmers separate the pulp from the grain using hand-held depulpers and leave the grains to ferment overnight. Thanks to this, the pulp is practically completely separated from the grain, which is ready for manual washing and further drying until the humidity reaches 50%. Further processing takes place in the washing station.
