The history of decaffeinated coffee
Caffeine is an organic chemical compound that can be found in many plant species that use it as a natural pesticide, i.e. a defense mechanism. For people who consume it mainly in coffee, it has a stimulating effect, supporting concentration and memory, but also addictive. It can also relieve pain, influence the release of dopamine and improve well-being. Many people have a negative attitude towards decaffeinated coffee, fearing that it loses its unique aroma along with the caffeine. Nothing could be further from the truth! Even though coffee is decaffeinated, it still has its unique taste, loved by millions, thanks to appropriate methods of de-caffeinating the beans. Although coffee berries have been used in Ethiopia thousands of years ago, the history of decaffeinated coffee dates back only to the 19th century and is even related to the famous German poet Johann Wolfgang von Goethe, who suspected coffee consumption as causing his insomnia. However, mass production of decaffeinated coffee began only in the first years of the 20th century and from today's point of view it was highly controversial. Benzene, which is considered a toxic and carcinogenic substance, was used as a solvent to remove caffeine. Fortunately, today decaffeination technology has advanced, and the methods used do not harm fans of this most popular drink in the world. How is decaffeinated coffee produced?
Caffeine from the coffee beans we sell is mainly removed using natural Swiss Water Process or Mountain Water Process. The first process, despite its name, takes place in the mountains of British Columbia in Canada, while the second one takes place in Mexico. In both cases, the most important thing in the decaffeination process is clear mountain or glacial water. This water washes out caffeine and other minerals and flavor substances from the green beans, which are later returned to the beans. In this way, as much as 99,9% of caffeine is washed out of the coffee beans, which meets the requirements of the United States Department of Agriculture and the European Union. Of course, there are also other methods of extracting caffeine (fortunately, they have nothing to do with benzene!). Organic solvents are also used for this purpose - methylene chloride and ethyl acetate. These solvents combine with the caffeine and then evaporate along with its remains. However, this method cannot be used with organic coffees. Another method is to use supercritical carbon dioxide, which also combines with caffeine, extracting it from coffee beans. Of course, work is still ongoing to develop decaffeinated coffee.
